Apple & Feta Crunch Salad


If you know me you know how much I love my salads. Now finding quality local products is something I LOVE supporting. Recently I was introduced to a new local greens grower called vertical roots. If you don't know who they are I will attach their website below.

Vertical Roots is a local hydroponic farmer located right in our backyard, that right. Right here in Edmonton Alberta, we have an amazing greens farmer selling to over 300 customers. They are organic never sprayed healthy greens. For me to have a quality product to use for my family and be able to support someone local is 100% down my alley. Please go give their website a visit, order some greens right online, and deliver to surrounding communities. SO.......what is it that we created for dinner tonight. I really wanted a crunchy, sweet and a little pazazz in this salad. I use Vertical Roots remain lettuce for this recipe as it has the crunch factor. Each ingredient paired so nicely. So let's get to it.


Salad:

Romain Lettuce (Vertical Roots) - 1 head

Whole Apple (Pick a kind you love) - 1 apple

Cucumber - 1- cup

Feta Cheese - 1/2 cup

Dried Cranberries - 1/2 cup

Pecans - 1/2 cup


Dressing:

Olive Oil - 1/2

Apple Cider Vinegar - 2tbls

Honey - 2tbls

Dijon Mustard - 2tbls

Pinch of pink salt & pepper


Cut up your Romain lettuce into smaller cubes, you don't have giant leaves while trying to eat lol lol. Cut your apple into thin slices, you can absolutely cut the peel off if you like but it tastes great with it on. Cut up your cucumber into small coins. Take your feta out of the water and crumble it into small pieces and sprinkle it all over your salad. Don't mix it yet. Add your dried cranberries and pecans to your salad.


Now for your dressing, in a small mason jar, place it on your scale and zero your scale out to zero. Add your 1/2 cup (130g) of oil to your jar, add in your pre-measured apple cider vinegar, honey, Dijon mustard and your pinch of pink salt & pepper. Put a lid on the jar and shake. Pour that delicious dressing all over your salad and mix.


Now you can add chicken to this salad or have it as a side with dinner as we did. I hope you enjoy it. Please let me know what you think, I'd love a review.
