Baked Beet Cashew & Feta Salad


As I child, I wasn't the biggest veggie fan, but over the years my tastes have changed as most of us it does. Especially when we start cooking our own food, and experimenting with different ingredients to see what our style of cooking is and what our pallet is like.


They say it takes around ten times for our taste buds to adjust as a child to see if we like certain foods. The key is to keep giving those items to our kids even if they only take a small bite of that item they dislike.

For me as a child, I didn't like beets, or plain beet water soup lol lol yes I'm over-exaggerating a little it wasn't beet water lol. Then when I moved in with my hubby we started cooking a lot together. When I made borscht for the first time it was a whole other story or Brussels sprouts hmmm I can eat an entire pan to myself. I knew I wanted to step out of my element a little and make a beet salad. Beets are incredibly good for you from aiding in lowering blood pressure, they are low in calories but loaded with vitamins, minerals and fibre. It can help with your performance, reduce inflammation, and protect your cells from damage. Many athletes have used beet juice to improve their performance.


What is the ingredient you will need for this delicious new salad?


Salad Ingredients:

Fresh Beets: 3- beets (with stems included)

Cashews:1/2 cup

Feta Cheese:1-block crumbled

Dried Cranberries: 1/2 cup

Onions: 1/2 cup

Garlic: 2-cloves

Favourite spices:


Dressing:

Olive Oil: 1/4 cup

Honey: 1tbls

Lemon: 2tsp

Dijon: 2tbls

Sprinkle Pink salt & Pepper


First things first get that messy part down first. Yes, your hands will be purple. Preheat your oven to 375 degrees. Peel and cut up your beets, stems and onions. Combine all the ingredients in a glass pan. Sprinkle some olive oil, salt, pepper, Italian spice, garlic, and a little bit of chilli pepper. Now, with this spicing, you can add whatever spices YOU enjoy. This is the joy of cooking your own food, experiment. Cook your beets for 25 minutes or until they are soft and let them cool.


Cut up your grand rapid's greens, now if you want good quality greens you won't be disappointed with vertical roots. They are of amazing quality, and flavour and they last a long time my absolute favourite part is that they are local to our community. Add in your cooked beets, and mix all together, then top with your feta, cashews and cranberries. Mix them all together.


For your dressing, take a small mason jar, and add in your olive oil, your honey, lemon, dijon and a little pinch of pink salt and pepper. Shake and pour all over your salad and Enjoy!
