Chicken & Biscuits


I love comfort food, but a way to feel like I can make it more healthy for my family. Especially for Evan's needs.
I wanted something that is easy for moms to make, make it all in one pan. Also we need some leftovers. Great meal prep idea. This would give six servings. I used a cast-iron pan so this can be bake in the oven and not have to be transferred to another pan.

Ingredients:


Chicken pot pie filling:

  • Chicken Breast - x3

  • Carrots - 1.5 cups

  • Celery - 1.5 cups

  • Onions - .5 cup

  • Frozen Pea - 1 cup

  • Frozen Corn - .5 cup

  • Frozen mix veggies - 1 cup

  • Garlic - 3 cloves

  • Flour - .5 - 1 cup of flour

  • Chicken Broth - 1 container

Biscuits:

  • Flour - 3 cups

  • Butter Milk - 1 cup

  • Sea Salt - 1tbls

  • Egg (egg wash) 1-egg

Spices:

I don't usually like give suggestion for spices as everyone taste or flavor pallet is different for everyone. So I challenge you!!! PLEASE, experiment with spices and flavors. Try buying single servings and practice making your own rubs, spice combos. This is cheaper and you don't get adding sugars or salts to your spices. The flavors will be more potent as well.


Cut your chicken into small pieces and place into a hot pan with olive oil. Cook until golden brown, add in your diced onions & garlic. Add in your carrots and celery until the carrots are almost soft. Then add in all your frozen veggies.

Once all cooked and mixed together, you will add in your chicken stock, and slowly add in your flour. This will help make your gravy. Add in the flour until you get the thick consistency you like.

Turn the heat down to simmer or low heat.


Making you biscuits. Take your flour and salt mix together well. Slowly add in your buttermilk and mix until you have a ball. Take some flour on your counter and knead your biscuits until they are fully mixed, your rolls shouldn't be sticky. Roll your dough into a long loaf, and cut 1-2 inch rolls. You can form and roll the dough into round biscuits but make sure they aren't completely flat. You should have enough to almost fully cover your pan.


Set your oven to 375-degrees. Turn your chicken pot pie mix off the burner. Take your newly made biscuits and place on top of the pan of chicken pot pie. Mix your egg in a bowl and add in some parmesan cheese, garlic to your eggs. Brush on top of the biscuits.


Place in the oven for 25-minute or until the biscuits are golden Brown.


Once finished, take out of the oven and let it sit to cool off before serving.
