If you have not tried spaghetti squash, its something you should definitely give a shot. My kids absolutely love it and could eat it on it own with a little salt and pepper. This is an alternative to having pasta and a lower carb option, especially for Evan. With it being lower carb your can have higher volume. Who doesn’t want more to eat right. For your meat sauce, pack in the veggies, get those colors into your meal, and higher volume, lots of micronutrients.
Squash ——————————————————————————————- 2 squashes for a family of 4
Ground Beef, Deer, Turkey or Chicken ——————————————- 1- package (if you need more to hit your macro’s that ok)
Tomato sauce ——————————————————————————- 1/2 Jar
Shredded Cheese ————————————————————————– 1-cup for all 4 squash (you can use more or less)
Spinach —————————————————————————————– 3-cups
Bell peppers ———————————————————————————- 1-2 peppers
Onion ——————————————————————————————— 1/2 Onion
Mushrooms ———————————————————————————– 1-cup
Garlic ——————————————————————————————— 1tbls

First pre-heat your oven to 400-degrees, cut and clean out your squashes. Place them on a baking sheet face down with a small amount of water cook for 55-minutes. Pre-heat the stove on medium heat and put your ground meat into the pan. Once cooked add in your spices & garlic to your meat. Now load up your veggies and cook until you get the desire you want from your veggies, some like soft veggies some like a crunch. Now the most satisfying part, adding the tomato sauce, now you can add what-ever sauce floats your boat, BUT like I always say check your labels and ingredients. Make sure they align with your macro’s (if your tracking), and what the serving size is to those macro’s. Even if you aren’t tracking you should always look at the label and ingredients. Let that simmer.
Now take out your squash, flip them up and with a fork scrap all of your squash so its loose in that outer skin of the squash, leave it in the skin you will use this as your bowl when you double bake it. Now keep the squash on the pan and place your meat sauce on top, place some shredded cheese on top and put back into the oven until cheese is at its melted desire, I like my cheese golden brown, my husband doesn’t. lolol
We usually have this meal with a little plain Greek yogurt (little added protein), and garlic toast. This is totally optional. Enjoy! and let me know your thoughts.
