Who doesn't love a treat for breakfast, I know my kids sure do. Who doesn't love Lemon Meringue Pie? Especially if it is homemade Lemon meringue that grandma makes on those special holidays.
So when I found some lemon low-fat pudding mix I knew I needed to try and recreate this recipe into a delicious breakfast that hits all my macros. Yes, I'm a macro tracker. I do this because my son is type 1 diabetic and him seeing my track doesn't feel left out and it keeps me on track with the training goals I set out for myself. So let's get to it! :)
Ingredients you will need:
Quick oats - 1/2 (this is in these small mason jars, use the big ones if you eat more)
Lemon Pudding mix (other sugar-free or fat-free)
Lemon Zest - 1- small lemon
Graham Crackers - 1-full square
Cool whip sugar-free or fat-free
Protein powder vanilla (xyngular is the brand I use)
Unsweetened Almond milk
Mason Jar ( I do 3 days worth)
Measure out your oats, and place them into each mason jar. I use a funnel cause I hate when I waste any kind of food. Add a little lemon zest to your oat mixture, and measure with your heart. Mix your protein powder and almond milk together, and give a good shake until completely blended. If I have three jars I do three scoops of protein powder. Pour onto your oats until they are submerged don't overfill or your pudding will mix in. You want layers instead of mixed together. Once you have your milk and oats done let them sit in the fridge until you are done making your pudding mix. For the pudding mix, you will take two cups of water and blend the entire package into the bowl. Blend for two minutes until it's a nice thick consistency. Place in the fridge for 10 minutes.
Now after your 10 minutes is up take your mason jars & pudding mix out. If your tracking your food make sure to put the pudding mix on the scale and zero it out. Measure out the amount to your goals. I usually measure out mine and my husband's. I do around 30-50g in my jars and the rest into my hubbies cause he can eat more than me. Lucky bugger lol. Now add your cool whip, same with your pudding mix make sure to place your container on the scale and zero it out. I do 1-2tbls depending on what will fit without overflowing. Then I will add a little lemon zest to my cool whip.
